Indore’s Makke ka Sajja is the Ultimate Winter Breakfast
Vandita Vijayvergiya shares her mother-in-law’s recipe for quick pressure-cooked Sajja, the perfect breakfast for a winter morning.
Winter is all about pipping hot food. One of my favorites is a warm bowl of Sajja glistening with ghee. I learned to make it from my mother-in-law, who is from Indore and is very fond of both cooking & eating. Traditionally, Sajja is steamed on a slow flame. But here’s our family’s recipe for super quick and unbelievably simple Sajja in a pressure cooker!
Recipe for Sajja
Ingredients:
300 g Cornmeal Flour (Makke ka Aata)
1/4 tsp Roasted Cumin Powder
Salt as per taste
2 Green Chillies, chopped
1 inch Ginger, chopped
4 sprigs of coriander leaves, chopped
50 g Ghee/ Sesame Oil
Method:
In a pressure cooker, add all the ingredients and mix well.
Add boiling water to and keep stirring it so that no lumps remain.
Put the pressure cooker on gas and cover the lid. Cook for about 2 whistles on a medium flame.
Open the pressure cooker, add 3 tbsp of ghee or sesame oil, and stir well.
Cook for 5 minutes on low flame, while stirring the mix to make sure no lumps are formed.
Serve hot with a drizzle of extra virgin sesame oil or ghee.
